When you can't eat up all of the dishes at restaurant, what do you do in your
culture? In Japan, customers sometimes ask for the bag to pack and take out
the foods which they could not eat up.

We do that just because you don't want to waste the foods.

I heard in some countries it's impolite to do this, because it seems like you are stingy or something...

Some of Japanese may think it is
stingy...
In France, it's really rare when someone ask for this in a restaurant. I remember once, when I was young, I ate only a quarter of my pizza. My grandmother asked for a box to take away the pizza. I've never did it so far!
It's a shame, it would be better if it was in the habit, I don't like to waste food. Why throwing it if you can bring it..
However, here we can ask to take to bottle of wine if we don't drink all. Hopefully, because it's really exepensive in restaurant!
